- 1 tsp cumin
- 1 cup shredded cheddar cheese
- 1 cup chopped bell peppers (red or yellow)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- Baking powder biscuits for serving (optional)
Instructions
- Brown the ground beef in a skillet over medium heat until no longer pink.
- Add diced onion and minced garlic; sauté until softened.
- In a slow cooker, combine browned beef with beans, corn, tomatoes, bell peppers, and spices. Stir well.
- Cook on low for 6-8 hours or high for 3-4 hours.
- About 15 minutes before serving, sprinkle cheese on top and cover until melted.
