Instructions
- Cook the Sausage: In a large pot, brown the sausage over medium heat, breaking it into crumbles. Remove and set aside.
- Sauté Aromatics: In the same pot, sauté onion and garlic until fragrant, about 2-3 minutes.
- Add Vegetables: Stir in carrots, celery, potatoes, and green beans. Cook for 5 minutes, stirring occasionally.
- Simmer the Soup: Add the sausage back to the pot along with tomatoes, broth, Italian seasoning, and smoked paprika (if using). Bring to a boil, then reduce heat and simmer for 25-30 minutes until vegetables are tender.
- Season and Serve: Adjust salt and pepper to taste. Ladle into bowls, garnish with parsley, and serve warm.
