Description

Indulge in the vibrant flavors of Smash Chicken Caesar Tacos, a delightful fusion perfect for busy weeknights or festive gatherings. Juicy, seasoned chicken is smashed into a savory filling, enveloped in warm tortillas, and topped with crisp romaine lettuce and creamy Caesar dressing. This easy-to-make dish will have everyone at the table smiling and coming back for seconds.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup Caesar dressing
  • 2 cups romaine lettuce, chopped
  • 8 small flour or corn tortillas
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Chop romaine into bite-sized pieces and grate Parmesan cheese.
  2. Heat a skillet over medium-high heat with 2 tsp olive oil. Season chicken with salt and pepper; cook until golden brown, about 6-7 minutes per side.
  3. Remove chicken from the skillet when fully cooked (internal temp of 165°F). Let rest briefly before smashing with a fork or potato masher.
  4. In a bowl, mix smashed chicken with Caesar dressing until evenly coated.
  5. Warm tortillas until soft, then layer with chicken mixture, romaine lettuce, and sprinkle with Parmesan cheese.
  6. Plate tacos beautifully and serve them with extra Caesar dressing for dipping.
