  • 2 bell peppers (any color), sliced
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 3 tbsp extra virgin olive oil
  • ¼ cup fresh cilantro, chopped
  • Juice of 1 lime
  • Tortillas or cooked rice (for serving)
  • Sour cream or Greek yogurt (for topping)
  • Fresh salsa or pico de gallo (for topping)

Instructions

  1. Prep your ingredients by washing and slicing the bell peppers and onion. Mince the garlic.
  2. In a bowl, mix olive oil, cumin, chili powder, lime juice, and minced garlic. Add chicken breasts and marinate while prepping other ingredients.
  3. Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 3-4 minutes). Add bell peppers and season lightly.
  4. Remove marinated chicken from the bowl (reserve marinade) and cook in the skillet until golden brown (6-7 minutes per side).
  5. Once cooked through (internal temperature of 165°F), slice the chicken into strips and return it to the skillet with veggies to combine.
  6. Serve the mixture over warm tortillas or rice, garnished with cilantro and lime wedges.
