- 3 tbsp extra virgin olive oil
- ¼ cup fresh cilantro, chopped
- Juice of 1 lime
- Tortillas or cooked rice (for serving)

Instructions
- Prep your ingredients by washing and slicing the bell peppers and onion. Mince the garlic.
- In a bowl, mix olive oil, cumin, chili powder, lime juice, and minced garlic. Add chicken breasts and marinate while prepping other ingredients.
- Heat olive oil in a large skillet over medium heat. Sauté onions until translucent (about 3-4 minutes). Add bell peppers and season lightly.
- Remove marinated chicken from the bowl (reserve marinade) and cook in the skillet until golden brown (6-7 minutes per side).
- Once cooked through (internal temperature of 165°F), slice the chicken into strips and return it to the skillet with veggies to combine.
