- 1 lb large shrimp, peeled and deveined
- 3 bell peppers (mixed colors), sliced
- 1 large onion, sliced
- 2 tablespoons fajita seasoning
- 8 flour tortillas
- 2 tablespoons olive oil
- Lime wedges for serving
Instructions
- Toss shrimp with 1 tablespoon fajita seasoning
- Heat oil in large skillet over high heat
- Cook peppers and onions until charred, 5-6 minutes; remove
- Add shrimp to pan, cook 2-3 minutes until pink
- Return vegetables to pan, toss with remaining seasoning
- Serve with warm tortillas and lime wedges
Notes
- Pat shrimp dry before seasoning for better browning
- Don’t overcrowd the pan to achieve proper searing
- Warm tortillas in microwave or on stovetop before serving
