Description

Sizzling shrimp fajitas with colorful bell peppers and onions, seasoned with Mexican spices and served with warm tortillas.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 bell peppers (mixed colors), sliced
  • 1 large onion, sliced
  • 2 tablespoons fajita seasoning
  • 8 flour tortillas
  • 2 tablespoons olive oil
  • Lime wedges for serving

Instructions

  1. Toss shrimp with 1 tablespoon fajita seasoning
  2. Heat oil in large skillet over high heat
  3. Cook peppers and onions until charred, 5-6 minutes; remove
  4. Add shrimp to pan, cook 2-3 minutes until pink
  5. Return vegetables to pan, toss with remaining seasoning
  6. Serve with warm tortillas and lime wedges

Notes

  • Pat shrimp dry before seasoning for better browning
  • Don’t overcrowd the pan to achieve proper searing
  • Warm tortillas in microwave or on stovetop before serving
