  • 9 lasagna noodles
  • 2 cups fresh baby spinach
  • 1 cup whole milk ricotta cheese
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup freshly grated Parmesan cheese
  • 2 large eggs
  • 2 cups marinara sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions until al dente; drain and set aside.
  3. In a bowl, mix ricotta cheese, eggs, half of the Parmesan, salt, and pepper until smooth.
  4. Fold in spinach and half of the mozzarella into the cheese mixture.
  5. In a baking dish, spread a thin layer of marinara sauce at the bottom. Layer noodles, then half of the cheese mixture. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 25 minutes. Remove foil, top with remaining mozzarella and Parmesan; bake uncovered for an additional 15-20 minutes until golden brown.
