A simple yet flavorful Mexican-inspired dish where tender chicken breasts are slow-cooked in zesty salsa until they’re fork-tender and infused with vibrant flavors.

- 4 large boneless, skinless chicken breasts
- 2 cups chunky salsa (medium or hot)
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup frozen corn
Instructions
- Place chicken breasts in the bottom of your crockpot.
- Pour salsa over the chicken and sprinkle with taco seasoning.
- Add black beans and corn, stirring gently to combine.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
- Shred chicken with two forks and stir to combine with sauce.
Notes
- For extra flavor, add a diced onion or bell pepper
- Serve over rice, in tacos, or with tortilla chips
- Freezes well for up to 3 months
- Can be made with frozen chicken breasts (add 1 hour to cooking time)
