Description

A simple yet flavorful Mexican-inspired dish where tender chicken breasts are slow-cooked in zesty salsa until they’re fork-tender and infused with vibrant flavors.


Ingredients

  • 4 large boneless, skinless chicken breasts
  • 2 cups chunky salsa (medium or hot)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup frozen corn

Instructions

  • Place chicken breasts in the bottom of your crockpot.
  • Pour salsa over the chicken and sprinkle with taco seasoning.
  • Add black beans and corn, stirring gently to combine.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
  • Shred chicken with two forks and stir to combine with sauce.

Notes

  • For extra flavor, add a diced onion or bell pepper
  • Serve over rice, in tacos, or with tortilla chips
  • Freezes well for up to 3 months
  • Can be made with frozen chicken breasts (add 1 hour to cooking time)
