  • 1 cup provolone cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, heat olive oil and sauté onions until soft (about 3 minutes).
  3. Add beef and optional mushrooms; cook until beef is no longer pink (about 5 minutes).
  4. Stir in garlic powder and Italian seasoning; mix well.
  5. Halve the bell peppers lengthwise and remove seeds. Place cut-side up in a baking dish.
  6. Fill each pepper half with the beef mixture and top generously with provolone cheese.
  7. Cover with foil and bake for 25 minutes; then remove foil and bake an additional 10 minutes until cheese is bubbly and golden brown.
