- 1½ pounds chicken breasts, cut into 1-inch pieces
- 1 pound penne pasta
- 3 cups marinara sauce
- 4 cups chicken broth
- 2 cups mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Season chicken with salt, pepper, and Italian seasoning.
- Heat oil in large pot, cook chicken until golden, about 5-6 minutes.
- Add garlic, cook for 30 seconds until fragrant.
- Add pasta, marinara sauce, and broth. Bring to boil, then simmer covered for 15 minutes.
- Top with both cheeses, cover until melted (2-3 minutes).
Notes
- Stir occasionally to prevent pasta from sticking
- Add red pepper flakes for extra heat
- Fresh basil makes an excellent garnish
- Leftovers keep well for 3 days in refrigerator
