Ingredients

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 3 cups mixed vegetables (broccoli, carrots, snap peas)
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 3 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Mix soy sauce and cornstarch in a small bowl to create the sauce.
  2. Heat oil in a large wok or skillet over high heat. Add chicken and cook until golden, about 5-6 minutes.
  3. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  4. Add vegetables, stir-fry for 3-4 minutes until crisp-tender.
  5. Pour sauce mixture over chicken and vegetables, cook for 1-2 minutes until thickened.
