- 2 large chicken breasts, sliced into strips
- 4 large flour tortillas
- 2 cups shredded Mexican cheese blend
- 1 bell pepper, sliced
- 1 onion, sliced
- 2 tablespoons fajita seasoning
- 2 tablespoons olive oil
- Sour cream and guacamole for serving
Instructions
- Season chicken strips with fajita seasoning.
- Heat oil in a large skillet, cook chicken until golden, about 6-7 minutes.
- Add peppers and onions, cook until tender-crisp, about 4 minutes.
- In a clean skillet, place tortilla, add cheese, cooked chicken mixture, more cheese, and top with second tortilla.
- Cook until golden brown on both sides, about 2 minutes per side.
Notes
- Use pre-made fajita seasoning or make your own with chili powder, cumin, and garlic powder
- For extra crispiness, brush tortillas with oil before cooking
- Cut into wedges and serve immediately while cheese is melted
