Ingredients

  • 2 large chicken breasts, sliced into strips
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons fajita seasoning
  • 2 tablespoons olive oil
  • Sour cream and guacamole for serving

Instructions

  • Season chicken strips with fajita seasoning.
  • Heat oil in a large skillet, cook chicken until golden, about 6-7 minutes.
  • Add peppers and onions, cook until tender-crisp, about 4 minutes.
  • In a clean skillet, place tortilla, add cheese, cooked chicken mixture, more cheese, and top with second tortilla.
  • Cook until golden brown on both sides, about 2 minutes per side.
