- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 12 oz white chocolate, melted
- 1 cup fresh raspberries
- 1/4 cup raspberry preserves
Instructions
- Mix graham crumbs and butter; press into 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time.
- Fold in melted white chocolate.
- Pour half the batter into crust. Drop raspberries and preserves in dollops.
- Add remaining batter. Swirl with knife.
- Bake at 325°F for 1 hour 15 minutes until center is almost set.
- Cool completely, then refrigerate 4 hours.
Notes
- Allow ingredients to reach room temperature
- Don’t overmix after adding eggs
- Use water bath to prevent cracking
