Ingredients

  • 4 salmon fillets (skinless)
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. reheat oven to 375°F (190°C).
  2. In a bowl, mix spinach, cream cheese, Parmesan, garlic, salt, and pepper.
  3. Make a slit in each salmon fillet to create a pocket and stuff with the spinach mixture.
  4. Heat olive oil in a skillet and sear salmon for 2 minutes per side.
