- 4 salmon fillets (skinless)
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- reheat oven to 375°F (190°C).
- In a bowl, mix spinach, cream cheese, Parmesan, garlic, salt, and pepper.
- Make a slit in each salmon fillet to create a pocket and stuff with the spinach mixture.
- Heat olive oil in a skillet and sear salmon for 2 minutes per side.
- Transfer to a baking dish and bake for 15–20 minutes until cooked through.
