  • 8 oz rice noodles
  • 1 cup bell peppers, thinly sliced
  • 1 cup carrots, julienned
  • 3 green onions, sliced
  • ½ cup toasted peanuts, chopped
  • ½ cup natural peanut butter
  • 2 tbsp soy sauce (low-sodium)
  • 2 tbsp lime juice (fresh)
  • 1 tsp sesame oil
  • 1 tsp sriracha (optional)

Instructions

  1. Boil water in a large pot. Add rice noodles and cook according to package instructions until al dente. Drain and rinse under cold water.
  2. While the noodles cook, chop bell peppers and carrots into thin strips.
  3. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, and sriracha until smooth. Add water gradually if needed.
  4. In a large bowl, combine cooked noodles and chopped vegetables. Drizzle with peanut sauce and toss until well coated.
  5. Serve topped with chopped peanuts and green onions.
