Ingredients

  • 8 oz pasta (spaghetti, linguine, or penne)
  • 1 lb large shrimp, peeled and deveined
  • 2 cups broccoli florets
  • 3 cloves garlic, minced
  • 3 tbsp olive oil or unsalted butter
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Optional: Red pepper flakes for a spicy kick

Instructions

  1. Cook the Pasta: Boil the pasta in salted water according to package instructions. Reserve 1/2 cup of pasta water and drain.
  2. Blanch the Broccoli: Add broccoli to the pasta water during the last 2 minutes of cooking. Remove and set aside.
  3. Sauté the Shrimp: In a large skillet, heat olive oil or butter over medium heat. Add shrimp and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
  4. Make the Sauce: In the same skillet, add garlic and sauté until fragrant, about 1 minute. Add the reserved pasta water and lemon juice, stirring to combine.
  5. Combine: Toss the pasta, shrimp, and broccoli in the skillet. Mix in Parmesan cheese and season with salt, pepper, and red pepper flakes, if using.
  6. Serve: Divide into bowls and garnish with extra Parmesan and lemon zest if desired.
