- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 (14 oz) can diced tomatoes
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup fresh spinach or kale (optional)
- Grated Parmesan cheese, for garnish
Instructions
- Cook the Sausage: In a large pot, brown the sausage over medium heat, breaking it into small pieces. Remove and set aside.
- Sauté Vegetables: In the same pot, sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
- Simmer the Broth: Add the sausage back to the pot, followed by the tomatoes, chicken broth, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Cook the Pasta: Stir in the pasta and cook until tender, about 8-10 minutes.
- Add Greens (Optional): Stir in spinach or kale until wilted.
- Serve: Ladle soup into bowls and top with grated Parmesan cheese.
