  • 1 (14 oz) can diced tomatoes
  • 4 cups chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup fresh spinach or kale (optional)
  • Grated Parmesan cheese, for garnish

Instructions

  1. Cook the Sausage: In a large pot, brown the sausage over medium heat, breaking it into small pieces. Remove and set aside.
  2. Sauté Vegetables: In the same pot, sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
  3. Simmer the Broth: Add the sausage back to the pot, followed by the tomatoes, chicken broth, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 20 minutes.
