- 4 medium zucchini, sliced into 1/4-inch rounds
- 1½ cups Italian seasoned breadcrumbs
- ½ cup grated Parmesan cheese
- 2 large eggs
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly brush with olive oil.
- In a shallow bowl, combine breadcrumbs, Parmesan cheese, and garlic powder. In another bowl, beat eggs with a pinch of salt.
- Dip each zucchini slice in egg, then coat with breadcrumb mixture. Place on prepared baking sheet.
- Drizzle remaining olive oil over the breaded zucchini slices.
- Bake for 22-25 minutes, flipping halfway through, until golden brown and crispy.
Notes
- Pat zucchini slices dry before breading to ensure maximum crispiness
- Don’t overcrowd the baking sheet
- Serve immediately while hot and crispy
- Great as an appetizer or side dish with marinara sauce
