Description

Crispy, golden-brown zucchini slices coated in Italian-seasoned breadcrumbs and Parmesan cheese, baked to perfection. A healthier alternative to fried zucchini that’s just as delicious.


Ingredients

  • 4 medium zucchini, sliced into 1/4-inch rounds
  • 1½ cups Italian seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly brush with olive oil.
  • In a shallow bowl, combine breadcrumbs, Parmesan cheese, and garlic powder. In another bowl, beat eggs with a pinch of salt.
  • Dip each zucchini slice in egg, then coat with breadcrumb mixture. Place on prepared baking sheet.
  • Drizzle remaining olive oil over the breaded zucchini slices.
  • Bake for 22-25 minutes, flipping halfway through, until golden brown and crispy.
