Description

These delectable mini chicken meatloaves are infused with the savory flavors of garlic and Parmesan cheese. Perfect for a comforting weeknight dinner, these individual-sized loaves are moist, flavorful, and sure to become a family favorite.


Ingredients

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup milk
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp dried parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  • Preheat the oven to 400°F (200°C). Grease a muffin tin or line with muffin liners.
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, milk, egg, minced garlic, parsley, salt, and black pepper. Mix until well combined.
  • Divide the mixture evenly among the muffin cups, pressing gently to shape into meatloaves.
  • Bake for 25 minutes or until the internal temperature reaches 165°F (74°C).
  • Remove from the oven and let the meatloaves rest for 5 minutes before serving.

Notes

For a cheesy twist, sprinkle extra Parmesan cheese on top of the meatloaves during the last 5 minutes of baking.
