Instructions
- Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners and place one Oreo in the bottom of each.
- Beat cream cheese and sugar until smooth. Add vanilla, egg, and sour cream, mixing until combined.
- Spoon the mixture evenly over the Oreos. Bake for 20-25 minutes or until set. Cool completely.
- Dip strawberries in melted chocolate and let set on parchment paper.
- Top each cheesecake with a chocolate-covered strawberry. Chill for at least 2 hours before serving.
