Instructions
- Preheat the oven to 350°F (175°C). In a bowl, mix crushed cookies with melted butter until combined. Press firmly into the bottom of a springform pan to form the crust.
- Beat softened cream cheese in a separate bowl until smooth. Gradually add sugar and mix well. Stir in sour cream and vanilla extract until fully combined.
- Add eggs one at a time, mixing on low speed until just incorporated.
- Pour the filling over the crust and bake for 50-60 minutes, until edges are set but the center is slightly jiggly. Allow to cool in the oven for an hour before refrigerating for at least four hours or overnight.
