Ingredients

  • 1 large onion, finely chopped
  • 3 cups chicken broth
  • 2 cups sharp cheddar cheese, shredded
  • 2 cups whole milk
  • 4 tablespoons butter
  • 3 tablespoons flour
  • Salt and pepper to taste
  • Optional garnish: bacon bits, green onions

Instructions

  • In a large pot, melt butter and sauté onions until translucent. Stir in flour to create a roux and cook for 1 minute.
  • Gradually add chicken broth and milk, stirring constantly until smooth. Add diced potatoes.
