- 6 medium potatoes, peeled and diced
- 1 large onion, finely chopped
- 3 cups chicken broth
- 2 cups sharp cheddar cheese, shredded
- 2 cups whole milk
- 4 tablespoons butter
- 3 tablespoons flour
- Salt and pepper to taste
- Optional garnish: bacon bits, green onions
Instructions
- In a large pot, melt butter and sauté onions until translucent. Stir in flour to create a roux and cook for 1 minute.
- Gradually add chicken broth and milk, stirring constantly until smooth. Add diced potatoes.
- Simmer for 20-25 minutes or until potatoes are tender, stirring occasionally.
- Stir in cheese until melted and smooth. Season with salt and pepper.

- For a thicker soup, mash some potatoes against the pot’s side
