Delightful cookie cups filled with a creamy, sweet cannoli filling make for the perfect bite-sized dessert for any occasion.


Ingredients

  • 1 cup flour
  • 1/2 cup powdered sugar
  • 1/4 cup butter, softened
  • 1 egg yolk
  • 1/2 cup ricotta cheese
  • 1/4 cup mascarpone cheese
  • 1/4 cup mini chocolate chips
  • 1/2 tsp vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • Combine flour, powdered sugar, butter, and egg yolk to form a dough. Press small portions into the muffin tin to create cups.
  • Bake for 10-12 minutes until lightly golden. Allow to cool.
  • In a bowl, mix ricotta, mascarpone, vanilla, and chocolate chips until smooth.
  • Pipe the filling into the cooled cookie cups.
  • Chill in the fridge for 30 minutes before serving.

Notes
