- 1 cup flour
- 1/2 cup powdered sugar
- 1/4 cup butter, softened
- 1 egg yolk
- 1/2 cup ricotta cheese
- 1/4 cup mascarpone cheese
- 1/4 cup mini chocolate chips
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease a muffin tin.
- Combine flour, powdered sugar, butter, and egg yolk to form a dough. Press small portions into the muffin tin to create cups.
- Bake for 10-12 minutes until lightly golden. Allow to cool.
- In a bowl, mix ricotta, mascarpone, vanilla, and chocolate chips until smooth.
- Pipe the filling into the cooled cookie cups.
- Chill in the fridge for 30 minutes before serving.
Notes
- You can garnish with powdered sugar or crushed pistachios for an extra flair.
- Store leftovers in the refrigerator for up to 3 days
