Ingredients

  • 2 carrots, sliced
  • 2 celery stalks, chopped

  • 2 cans (14.5 oz each) diced tomatoes
  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook until softened (5-7 minutes).
  • Add garlic and cook for 1 minute until fragrant.
  • Add cabbage, tomatoes, broth, and thyme. Bring to a boil.
  • Reduce heat, simmer covered for 30-35 minutes until vegetables are tender.
  • Season with salt and pepper to taste.
