- 1 medium head cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 2 cans (14.5 oz each) diced tomatoes
- 6 cups vegetable broth
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery; cook until softened (5-7 minutes).
- Add garlic and cook for 1 minute until fragrant.
- Add cabbage, tomatoes, broth, and thyme. Bring to a boil.
- Reduce heat, simmer covered for 30-35 minutes until vegetables are tender.
- Season with salt and pepper to taste.
