Description

Ingredients

  • 4 medium beets, peeled and quartered
  • 4 cups mixed salad greens
  • 4 ounces goat cheese, crumbled
  • 1/2 cup walnuts, toasted
  • 2 tablespoons honey
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F. Wrap beets in foil and roast for 45 minutes until tender.
  • While beets cool, whisk together honey, balsamic vinegar, and olive oil.
  • Chop cooled beets into bite-sized pieces.
  • Arrange greens on plates, top with beets, goat cheese, and walnuts.
  • Drizzle with dressing just before serving.
