- 4 medium beets, peeled and quartered
- 4 cups mixed salad greens
- 4 ounces goat cheese, crumbled
- 1/2 cup walnuts, toasted
- 2 tablespoons honey
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Wrap beets in foil and roast for 45 minutes until tender.
- While beets cool, whisk together honey, balsamic vinegar, and olive oil.
- Chop cooled beets into bite-sized pieces.
- Arrange greens on plates, top with beets, goat cheese, and walnuts.
- Drizzle with dressing just before serving.

- Beets can be roasted ahead and stored in the refrigerator
- Substitute feta for goat cheese if preferred
