Description

These light and fluffy baked donuts burst with fresh raspberry flavor and are topped with a pretty pink glaze. Perfect for breakfast, brunch, or a sweet afternoon treat!


Ingredients

  • 2 cups all-purpose flour
  • 2/3 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup milk
  • 1/4 cup melted butter
  • 2 teaspoons vanilla extract
  • 1 cup fresh raspberries, mashed

Raspberry Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons raspberry puree
  • 12 tablespoons milk, if needed

Instructions

  • Preheat oven to 350°F (175°C). Grease a donut pan with non-stick spray.
  • Whisk together flour, sugar, baking powder, and salt in a large bowl.
  • In another bowl, beat eggs, milk, melted butter, and vanilla. Fold in mashed raspberries.
  • Stir wet ingredients into dry until just combined. Pipe or spoon batter into donut pan.
  • Bake for 10-12 minutes until donuts spring back when touched.
  • For glaze, mix powdered sugar with raspberry puree, adding milk if needed. Dip cooled donuts in glaze.

Notes

  • Use fresh or frozen raspberries (thawed and drained)
  • Don’t overmix the batter to ensure tender donuts
  • Donuts are best enjoyed same day but can be stored in an airtight container for up to 2 days
