- 2 large chicken breasts, cooked and diced
- 2 ripe avocados, peeled and mashed
- 1/4 cup red onion, finely diced
- 1/2 cup celery, finely chopped
- 2 tablespoons fresh lime juice
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions
- Cook chicken breasts until done, let cool, then dice into small cubes.
- In a large bowl, mash the avocados with lime juice until creamy.
- Add diced chicken, red onion, celery, and cilantro to the mashed avocado.
- Mix gently until well combined. Season with salt and pepper.
- Chill for at least 30 minutes before serving.
