Description

A luxurious pasta dish combining pillowy gnocchi with earthy mushrooms and wilted spinach in a rich Parmesan cream sauce.


Ingredients

Scale
  • 1 lb potato gnocchi
  • 8 oz cremini mushrooms, sliced
  • 6 oz fresh spinach
  • 3 garlic cloves, minced
  • 1½ cups heavy cream
  • ½ cup Parmesan cheese
  • 3 tbsp butter
  • Salt and pepper to taste

Instructions

  • Cook gnocchi according to package directions. Reserve ½ cup pasta water.
  • Sauté mushrooms in butter until golden (5-7 minutes). Add garlic, cook 1 minute.
  • Pour in cream, simmer 3 minutes. Add spinach until wilted.
  • Stir in Parmesan until sauce thickens. Add gnocchi, toss to coat.
  • Adjust consistency with pasta water if needed. Season to taste.

Notes

  • Use fresh gnocchi for best texture
  • Substitute half-and-half for lighter version
  • Can add white wine for extra flavor
