A luxurious pasta dish combining pillowy gnocchi with earthy mushrooms and wilted spinach in a rich Parmesan cream sauce.
Ingredients

- 1 lb potato gnocchi
- 8 oz cremini mushrooms, sliced
- 6 oz fresh spinach
- 3 garlic cloves, minced
- 1½ cups heavy cream
- ½ cup Parmesan cheese
- 3 tbsp butter
- Salt and pepper to taste
Instructions
- Cook gnocchi according to package directions. Reserve ½ cup pasta water.
- Sauté mushrooms in butter until golden (5-7 minutes). Add garlic, cook 1 minute.
- Pour in cream, simmer 3 minutes. Add spinach until wilted.
- Stir in Parmesan until sauce thickens. Add gnocchi, toss to coat.
- Adjust consistency with pasta water if needed. Season to taste.
Notes
- Use fresh gnocchi for best texture
- Substitute half-and-half for lighter version
- Can add white wine for extra flavor
