Ingredients

- 1 cup wild rice blend
- 2 tablespoons olive oil
- 1 onion, diced
- 3 carrots, chopped
- 3 celery stalks, chopped
- 8 oz mushrooms, sliced
- 4 garlic cloves, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 cups kale, chopped
- Fresh thyme and sage
- Salt and pepper to taste
Instructions
- Cook wild rice according to package directions.
- Sauté onion, carrots, celery in olive oil until softened (8-10 minutes).
- Add mushrooms, garlic; cook 5 minutes.
- Pour in broth, bring to boil, reduce heat and simmer 15 minutes.
- Stir in cooked rice, cream, and kale. Simmer 5 minutes.
- Season with herbs, salt, and pepper.
Notes
- Make dairy-free by substituting coconut cream
- Stores well for 3-4 days in refrigerator
- Freezes well without cream (add when reheating)
