Description

Cozy Autumn Wild Rice Soup is a hearty blend of wild rice, roasted vegetables, and mushrooms in a creamy broth, perfect for chilly fall evenings.


Ingredients

Scale
  • 1 cup wild rice blend
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 8 oz mushrooms, sliced
  • 4 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • Fresh thyme and sage
  • Salt and pepper to taste

Instructions

  1. Cook wild rice according to package directions.
  2. Sauté onion, carrots, celery in olive oil until softened (8-10 minutes).
  3. Add mushrooms, garlic; cook 5 minutes.
  4. Pour in broth, bring to boil, reduce heat and simmer 15 minutes.
  5. Stir in cooked rice, cream, and kale. Simmer 5 minutes.
  6. Season with herbs, salt, and pepper.

Notes

  • Make dairy-free by substituting coconut cream
  • Stores well for 3-4 days in refrigerator
  • Freezes well without cream (add when reheating)
