- 2 pounds bone-in chicken breasts
- 8 cups chicken broth
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 medium onion, diced
- 2 cups egg noodles
- 2 bay leaves
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring broth to boil in a large pot. Add chicken and bay leaves. Reduce heat and simmer for 25 minutes until chicken is cooked.
- Remove chicken, shred meat, and discard bones and skin.
- Add vegetables to broth and simmer for 10 minutes.
- Stir in noodles and shredded chicken. Cook 8-10 minutes until noodles are tender.
- Season with salt and pepper. Garnish with parsley before serving.

- Use low-sodium broth to control salt content
