Description

A comforting classic featuring tender chicken, hearty vegetables, and silky noodles in a flavorful broth. Perfect for cold days or when feeling under the weather.


Ingredients

  • 2 pounds bone-in chicken breasts
  • 8 cups chicken broth
  • 3 carrots, sliced
  • 3 celery stalks, chopped
  • 1 medium onion, diced
  • 2 cups egg noodles
  • 2 bay leaves
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Bring broth to boil in a large pot. Add chicken and bay leaves. Reduce heat and simmer for 25 minutes until chicken is cooked.
  • Remove chicken, shred meat, and discard bones and skin.
  • Add vegetables to broth and simmer for 10 minutes.
  • Stir in noodles and shredded chicken. Cook 8-10 minutes until noodles are tender.
  • Season with salt and pepper. Garnish with parsley before serving.

Notes

  • Use low-sodium broth to control salt content
  • Make ahead: prepare without noodles and add them when reheating
  • Freezes well (without noodles)
