Chicken Fried Rice – A quick and satisfying Asian-inspired dish combining fluffy rice, tender chicken, and colorful vegetables.

- 3 cups cooked rice (day-old)
- 2 chicken breasts, diced
- 2 eggs, beaten
- 1 cup frozen peas and carrots
- 1/2 cup diced onion
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 2 tbsp vegetable oil
- 2 green onions, chopped
Instructions
- Heat oil in a large wok over medium-high heat. Cook diced chicken until golden, remove and set aside.
- Sauté onion and garlic until fragrant. Add frozen vegetables, cook until tender.
- Push vegetables to one side, scramble eggs in empty space.
- Add rice, chicken, and soy sauce. Stir-fry until heated through and well combined.
- Garnish with green onions and serve hot.
Notes
- Use cold, day-old rice for best results
- Customize with your preferred vegetables
- Add sesame oil for extra flavor
