Description

A hearty and comforting soup with ground beef, tender macaroni, and vibrant vegetables in a rich tomato broth. Perfect for a cozy family meal!

Ingredients

Scale
  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 (14 oz) can diced tomatoes
  • 4 cups beef broth
  • 1 cup elbow macaroni
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • Fresh parsley or Parmesan cheese (for garnish)

Instructions

  • Cook the Beef: In a large pot, brown the ground beef over medium heat. Drain excess fat, then add onion and garlic. Cook until onion is softened.
  • Add Vegetables: Stir in carrots and celery. Cook for 3-5 minutes until slightly tender.
  • Simmer the Soup: Add diced tomatoes, beef broth, and Italian seasoning. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Cook the Macaroni: Stir in macaroni and cook for 8-10 minutes until pasta is tender.
  • Season and Serve: Adjust salt and pepper to taste. Ladle into bowls and garnish with parsley or Parmesan cheese.

Notes

  • Use whole-grain or gluten-free macaroni if preferred.
  • For a spicier flavor, add a pinch of red pepper flakes.
  • This soup freezes well but cook the pasta separately to avoid overcooking when reheating.
