Description

A vibrant and flavorful bowl combining succulent spicy shrimp with fluffy rice, fresh vegetables, and a zesty sauce – perfect for a quick weeknight dinner that doesn’t compromise on taste.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 2 cups jasmine rice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon sriracha sauce
  • 1 lime, juiced
  • 2 cups mixed vegetables (bell peppers, carrots, snap peas)
  • Green onions and sesame seeds for garnish
  • Salt and pepper to taste

Instructions

  • Cook rice according to package directions. Meanwhile, pat shrimp dry and season with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
  • Add shrimp and sriracha, cooking for 2-3 minutes per side until pink and opaque. Add lime juice.
  • Steam vegetables until crisp-tender, about 5 minutes.
  • Assemble bowls with rice, shrimp, vegetables, and garnish with green onions and sesame seeds.

Notes

  • For meal prep, store components separately and assemble just before eating
  • Adjust sriracha amount to preferred spice level
  • Can substitute brown rice for added fiber
