- 1 pound large shrimp, peeled and deveined
- 2 cups jasmine rice
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 tablespoon sriracha sauce
- 1 lime, juiced
- 2 cups mixed vegetables (bell peppers, carrots, snap peas)
- Green onions and sesame seeds for garnish
- Salt and pepper to taste
Instructions
- Cook rice according to package directions. Meanwhile, pat shrimp dry and season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds until fragrant.
- Add shrimp and sriracha, cooking for 2-3 minutes per side until pink and opaque. Add lime juice.
- Steam vegetables until crisp-tender, about 5 minutes.
- Assemble bowls with rice, shrimp, vegetables, and garnish with green onions and sesame seeds.
Notes
- For meal prep, store components separately and assemble just before eating
- Adjust sriracha amount to preferred spice level
