  • 1 lb flank or sirloin steak, diced
  • 1 cup sharp cheddar queso cheese
  • 1 cup long-grain white rice
  • 1 cup bell peppers, diced (mixed red and green)
  • 1 medium yellow onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add diced steak, season with salt and pepper, and sear until browned (about 5-7 minutes). Remove from pan.
  2. In the same skillet, add diced onions and bell peppers; sauté until softened (3-4 minutes).
  3. Cook rice according to package instructions.
  4. Melt queso cheese in the skillet over low heat. If too thick, stir in a splash of milk.
  5. Combine cooked rice, sautéed veggies, and seared steak with the queso sauce until well mixed.
