Ingredients
Scale
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 cup unsalted butter (softened)
- 1 tbsp lemon zest (from about 1 lemon)
- 2 tbsp fresh lemon juice
- 2 large eggs (room temperature)
- 1/4 cup heavy cream
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 tsp cream of tartar
- 2 tbsp turbinado sugar
Instructions
- In a large bowl, cream softened butter and granulated sugar until light and fluffy. Mix in lemon zest.
- Beat in eggs one at a time, then add lemon juice and vanilla extract until well combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients until just combined; avoid overmixing.
- Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop rounded tablespoons of dough onto prepared sheets.
- While cookies bake, prepare the lemon curd by whisking heavy cream, powdered sugar, egg yolks, and lemon juice in a saucepan over low heat until thickened (about 10 minutes).
- Once cookies cool slightly, create an indentation in each cookie and fill generously with lemon curd. Sprinkle turbinado sugar on top.
- Caramelize the sugar using a kitchen torch or broiler set on low until golden brown.
