  • 1/4 tsp cream of tartar
  • 2 tbsp turbinado sugar

Instructions

  1. In a large bowl, cream softened butter and granulated sugar until light and fluffy. Mix in lemon zest.
  2. Beat in eggs one at a time, then add lemon juice and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients until just combined; avoid overmixing.
  4. Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper. Scoop rounded tablespoons of dough onto prepared sheets.
  6. While cookies bake, prepare the lemon curd by whisking heavy cream, powdered sugar, egg yolks, and lemon juice in a saucepan over low heat until thickened (about 10 minutes).
  7. Once cookies cool slightly, create an indentation in each cookie and fill generously with lemon curd. Sprinkle turbinado sugar on top.
  8. Caramelize the sugar using a kitchen torch or broiler set on low until golden brown.
