For the Crust:
- 2 cups Oreo cookie crumbs
- 6 tablespoons melted butter
For the Cheesecake:
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 2 tablespoons cocoa powder
- 1 tablespoon red food coloring
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
For the Topping:
- 2 cups fresh strawberries, halved
- 1/4 cup strawberry jam
- Whipped cream for garnish
Instructions
- Combine Oreo crumbs with melted butter and press into a 9-inch springform pan. Chill while preparing filling.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in cocoa powder, food coloring, vanilla, and sour cream until well combined.
- Pour mixture over crust and bake at 325°F for 60 minutes or until center is almost set. Cool completely, then refrigerate for 4 hours.
- Top with fresh strawberries and brush with warmed strawberry jam. Pipe whipped cream around edges before serving.
