Decadent chocolate cheesecake bars with a chocolate cookie crust, creamy cheesecake layer, and topped with cherry compote. These bars combine the classic flavors of Black Forest cake with the richness of cheesecake for an irresistible dessert.

For the Crust:
- 2 cups chocolate cookie crumbs
- 6 tablespoons melted butter
For the Cheesecake:
- 24 oz cream cheese, softened
- 3/4 cup sugar
- 3 large eggs
- 1/2 cup sour cream
- 4 oz semi-sweet chocolate, melted
- 1 teaspoon vanilla extract
For the Topping:
- 2 cups pitted cherries (fresh or frozen)
- 1/4 cup sugar
- 1 tablespoon cornstarch
- Whipped cream for garnish
Instructions
- Preheat oven to 325°F (165°C). Line a 9×13 inch pan with parchment paper.
- Mix cookie crumbs with melted butter, press into pan. Bake 10 minutes.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream, melted chocolate, and vanilla.
- Pour over crust, bake 35 minutes until center is almost set.
- For topping, cook cherries with sugar and cornstarch until thickened. Cool completely.
- Chill cheesecake 4 hours, top with cherry mixture and whipped cream before serving.
Notes
- Allow ingredients to reach room temperature before mixing
- Don’t overbake – center should still be slightly jiggly
- Can be made up to 3 days ahead and stored in refrigerator
