Ingredients

Scale
  • ½ medium green cabbage
  • 2 medium carrots
  • 2 stalks celery
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups low-sodium vegetable broth
  • 1 medium onion
  • 3 cloves garlic
  • Dried thyme
  • Black pepper
  • Salt

Instructions

  1. Wash and chop the cabbage into bite-sized pieces, slice the carrots into thin rounds, chop the celery stalks, dice the onion, and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook until fragrant.
  3. Stir in chopped carrots and celery; sauté for another 5 minutes.
  4. Add diced tomatoes with their juices and pour in enough vegetable broth to cover all ingredients.
  5. Season with dried thyme and black pepper; bring to a boil, then reduce heat to simmer for about 25 minutes until vegetables are tender.
  6. Serve hot, garnished with fresh herbs if desired.
