French Onion Potatoes are a deliciously comforting side dish that combines tender layers of thinly sliced Russet potatoes with sweet caramelized onions and melted Gruyère cheese.   • 2 lbs Russet potatoes, thinly sliced
  • 2 large sweet onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 cup Gruyère cheese, shredded
  • 4 tbsp unsalted butter
  • 2 tsp fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and a pinch of salt. Cook for about 15-20 minutes until golden brown and caramelized.
  3. While the onions cook, peel and slice the potatoes into thin rounds.
  4. Stir in minced garlic and thyme with the onions for an additional minute after caramelization.
  5. In a greased baking dish, layer half of the potato slices at the bottom. Top with half of the onion mixture and half of the Gruyère cheese. Repeat the layers.
  6. Cover with aluminum foil and bake for about 40 minutes. Remove foil and bake for an additional 15 minutes until cheese is bubbly and golden.
