  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • Juice of 1 lemon (about 2 tablespoons)
  • 3 tablespoons extra virgin olive oil
  • Fresh herbs (parsley or basil), chopped

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water or broth; bring to a boil. Reduce heat and simmer until liquid is absorbed (about 15 minutes).
  2. While quinoa cooks, chop cherry tomatoes, dice cucumber, and slice red onion.
  3. Pit and slice Kalamata olives. Crumble feta cheese over chopped veggies.
  4. Whisk together olive oil and lemon juice in a small bowl; season with salt and pepper.
  5. In a large bowl, combine quinoa with veggies and olives. Drizzle dressing over top and toss gently to combine.
