  • 4 boneless, skinless chicken breasts
  • 1 can (15 oz) black beans, rinsed
  • 1 cup long-grain white rice
  • 2 fresh limes (juice only)
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 2 tbsp olive oil

Instructions

  1. Mix lime juice, garlic powder, cumin, and olive oil in a bowl. Add chicken breasts and let marinate for at least 30 minutes.
  2. Rinse rice until water runs clear. Combine rice with 2 cups of water in a saucepan. Bring to a boil, then cover and simmer for about 18 minutes until fluffy.
  3. Heat rinsed black beans with a pinch of cumin and salt in a small pot over medium heat for about 5 minutes.
  4. Preheat grill or grill pan over medium-high heat. Grill marinated chicken for about 6-7 minutes per side until cooked through. Let rest before slicing.
  5. Layer rice in serving bowls, top with sliced chicken and warm black beans. Garnish with chopped cilantro and an extra squeeze of lime juice.
