  • 2 tablespoons gochujang
  • 3 tablespoons mayonnaise

Instructions

  1. Hard boil the eggs by placing them in a pot covered with cold water. Bring to a boil over medium heat, then cover and remove from heat. Let sit for 12 minutes.
  2. Cool the eggs in ice water for about 10 minutes, then peel under running water.
  3. Cut the peeled eggs in half lengthwise and scoop yolks into a bowl. Mix in gochujang, mayonnaise, Dijon mustard, salt, and pepper until smooth.
  4. Taste and adjust flavors as needed by adding more gochujang for heat or sweetness.
  5. Spoon or pipe the yolk mixture back into egg whites generously.
  6. Garnish with smoked paprika and chopped green onions before serving.
