  • 2 fresh lemons
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme leaves
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels. Rub olive oil all over the chicken, squeezing juice from one lemon half over it. Season generously with salt and pepper.
  3. Stuff the cavity with garlic cloves, remaining lemon halves, rosemary, and thyme.
