  • 2 lbs fresh ripe Roma tomatoes
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp sugar
  • Salt and pepper to taste
  • 1 cup fresh basil leaves, chopped

Instructions

  1. Wash and chop the tomatoes. Blanch them in boiling water for easier peeling if desired.
  2. In a large pot, heat olive oil over medium heat. Add onion and sauté until translucent (about 5 minutes). Then add minced garlic and sauté until fragrant (about 1 minute).
  3. Stir in the chopped tomatoes, sugar, oregano, salt, and pepper. Mix well.
  4. Bring the mixture to a gentle boil, then reduce heat to low. Cover partially and simmer for 30-40 minutes, stirring occasionally.
  5. Just before serving, stir in the fresh basil and adjust seasoning as necessary.
