For the Cupcakes:

  • 1½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

For the Filling and Topping:

  • 1 cup caramel sauce
  • ½ cup chopped peanuts
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • ½ cup butter, softened
  • ¼ cup heavy cream
  • Chocolate sauce for drizzling

Instructions

  • Mix dry ingredients in one bowl, wet ingredients in another. Combine to make batter.
  • Fill cupcake liners 2/3 full and bake at 350°F (175°C) for 18-20 minutes.
  • Once cooled, core centers and fill with caramel sauce and peanuts.
  • Beat peanut butter, butter, powdered sugar, and cream until fluffy for frosting.
  • Pipe frosting onto cupcakes and drizzle with chocolate and caramel sauce.
