For the Cupcakes:
- 1½ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 cup granulated sugar
- 2 large eggs
- ½ cup vegetable oil
- 1 cup buttermilk
- 1 teaspoon vanilla extract
For the Filling and Topping:
- 1 cup caramel sauce
- ½ cup chopped peanuts
- 1 cup creamy peanut butter
- 2 cups powdered sugar
- ½ cup butter, softened
- ¼ cup heavy cream
- Chocolate sauce for drizzling
Instructions
- Mix dry ingredients in one bowl, wet ingredients in another. Combine to make batter.
- Fill cupcake liners 2/3 full and bake at 350°F (175°C) for 18-20 minutes.
- Once cooled, core centers and fill with caramel sauce and peanuts.
- Beat peanut butter, butter, powdered sugar, and cream until fluffy for frosting.
- Pipe frosting onto cupcakes and drizzle with chocolate and caramel sauce.

- Can be frozen unfrosted for up to 1 month
