- 1½ pounds sirloin steak, cut into 1-inch cubes
- 1 pound baby potatoes, halved
- 6 tablespoons butter
- 6 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Parboil potatoes in salted water for 5 minutes. Drain and set aside.
- Season steak bites with salt and pepper.
- Heat olive oil in a large skillet over high heat. Sear steak bites in batches until browned, about 2-3 minutes. Remove and set aside.
- In the same pan, melt 4 tablespoons butter. Add potatoes and cook until golden, about 8-10 minutes.
- Add remaining butter and garlic, cook for 1 minute until fragrant.
- Return steak to the pan, add rosemary, and toss everything together for 1-2 minutes.
- Garnish with parsley and serve hot.
Notes
- Use room temperature steak for better searing
- Don’t overcrowd the pan when cooking steak
- For best results, choose sirloin, ribeye, or New York strip steak
