  • 2 pounds fresh butternut squash
  • 1 cup freshly grated Parmesan cheese
  • 34 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray or olive oil.
  2. Peel and cube the butternut squash into bite-sized pieces for even cooking.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about one minute).
  4. In a large bowl, mix sautéed garlic, cubed squash, salt, pepper, thyme, and half of the Parmesan cheese.
  5. Layer half of the mixture in the prepared baking dish. Sprinkle with additional Parmesan before adding the remaining mixture on top.
  6. Cover with aluminum foil and bake for about 30 minutes. Remove foil and bake an additional 15-20 minutes until golden brown and tender.
