  • 1 cup shrimp shells
  • 1 medium shallot, finely chopped
  • 2 garlic cloves, minced
  • 2 tablespoons tomato paste
  • ½ cup cognac or sherry
  • 2 cups heavy cream
  • 4 cups fish stock
  • 1 bay leaf
  • 3 sprigs fresh thyme
  • Juice of 1 lemon

Instructions

  1. Boil lobster tails for 8-10 minutes until bright red. Cool, extract meat, and reserve shells.
  2. In a pot, sauté shallots and garlic in olive oil until fragrant. Add shrimp shells, fish stock, bay leaf, and thyme; simmer for 30 minutes.
  3. Stir in tomato paste and cognac; simmer for an additional minute.
  4. Strain the broth to remove solids and return to low heat. Mix in heavy cream and season with salt, pepper, and lemon juice.
  5. Gently add chopped lobster meat; heat through without boiling.
  6. Serve garnished with fresh herbs.
