  • 1 cup (200g) orzo pasta
  • 2 cups (480ml) low-sodium chicken broth
  • 2 cups (60g) fresh spinach
  • 3 cloves garlic, minced
  • 2 tbsp (30ml) olive oil
  • Salt and pepper to taste
  • Optional: ¼ cup (25g) grated Parmesan cheese

Instructions

  1. Season the chicken thighs with salt and pepper. Heat olive oil in a large skillet over medium heat. Add chicken and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove and let rest.
  2. In the same skillet, add minced garlic; sauté for 30 seconds until fragrant.
  3. Pour in chicken broth, bring to a boil, then add orzo. Reduce heat and simmer for about 8-10 minutes until al dente, stirring occasionally.
  4. Stir in Boursin cheese until melted and creamy, then mix in fresh spinach until wilted.
  5. Slice the rested chicken and return it to the skillet, folding everything together until well combined. Serve immediately with optional Parmesan on top.
