Ingredients

  • ½ cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup pitted cherries (fresh or canned)

Instructions

  • Preheat Oven: Preheat to 350°F (175°C). Grease and line a 9-inch round cake pan.
  • Mix Dry Ingredients: In a bowl, sift flour, cocoa powder, baking powder, and baking soda.
  • Combine Wet Ingredients: In another bowl, whisk sugars, oil, eggs, vanilla, and buttermilk until smooth.
  • Make the Batter: Gradually add dry ingredients to the wet mixture. Fold in the cherries.
  • Bake: Pour batter into the prepared pan. Bake for 30 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
  • Prepare Ganache: Heat heavy cream until steaming (not boiling). Pour over chocolate chips, let sit for 2 minutes, then stir until smooth.
  • Assemble: Spread ganache over the cooled cake. Let set for 10 minutes before serving.

Notes

  • Fresh cherries add the best flavor, but canned cherries work well in a pinch.
  • Serve with a dollop of whipped cream for an extra indulgent treat.
  • Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
