Store potatoes in a plastic bag with many small holes. The holes allow air circulation.
Or store the potatoes in a dark place. In a bag draped with a kitchen towel to block the light.
Don’t store potatoes in a place where they could get hot, such as under the sink or next to a major appliance. And don’t wash potatoes before cooking them.
This will allow you to keep them for several weeks without changing their nutritional quality.
